French Baguettes



    • 2 1/4 tsp instant yeast
  • 2 cups warm water
  • 5 1/2 cups unbleached bread flour
  • 1 tbsp salt – I use sea salt 

 

 Mix all ingredients and make a stiff, shaggy ball.  Let rest for 5 minutes then knead for about 5 more minutes until dough is smooth. The dough will be dense. Place dough in an oiled  bowl and cover with plastic wrap.  You can place in refrigerator at this point to use the next day or allow to rise till doubled and then form into loaves, rise again and bake. 

If you place in refrigerator, remove it at least 2 hours before baking time.  When you transfer from ‘fridge try not to release the gas bubbles that have formed in the dough.  This recipe makes 4 baguettes so you can separate the dough into 4 equal portions. 

*The dough will last up to four days in the fridge so you can take one portion each day to bake so that you will have a baguette each day

To Form The Baguettes:

Shape the dough into  a rectangle and fold the bottom to the center and then fold the top to the center again.  Seal the seam then roll the bottom of the dough again to the center to create another seam – seal.  Roll the top down to create another seam – seal. The seam goes on the underside of the loaf. Roll gently back and forth to taper the ends.  

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

Place on an oiled baking sheet and brush top lightly with oil.  Cover with plastic wrap and allow to rise till almost doubled.  Score the baguette with a serrated knife.  Bake for 45 minutes in a preheated 450 degree oven.  Put 1 cup of water in a baking dish and place on rack below rack with baguettes to create steam. Cool before slicing – if you can wait! :-))))
